Retired eye expert Dr Terry Sanderson claims the Oscar winner was “out of control” when she smashed into him.
The court heard he suffered permanent brain damage and broken ribs in the 2016 crash.
Paltrow, 50, insists that Dr Sanderson, 76, ran into her with a “full body hit”.
She was on holiday at the Deer Valley ski resort in Park City, Utah, with her children Apple and Moses and her now-husband, Brad Falchuk.
The Shakespeare in Love star is set to testify in the US civil case.
She wants symbolic damages of $1 and legal fees.
Lawrence Buhler, lawyer for Mr Sanderson, told the jury Paltrow was distracted by one of her kids yelling “Mommy, Mommy watch me ski”.
He said: “She looks up to see and as she looks down, she screams. She skis into the back of Terry Sanderson.
“Sanderson is face down in the snow unconscious.”
Stephen Owens, for Paltrow, said of Dr Sanderson’s version: “We believe it to be utter BS.”
The case continues at Park City district court.
